Pistachio Swirl
Cream and pistachio folded together like gelato at the exact moment it starts to melt: soft green sweeping through butter-warm speckled cream, tightening to a tiny spiral navel at the centre of the bowl. Fine green rings gather at the rim like the last turn of the scoop. Serve nothing in it and it still looks like dessert.
